
I've always been a fan of pancakes, although I'm terrible at making them. I guess I'm just impatient, and I try to flip them before they're ready - which means a mess in the pan and on the spatula. Or, if the pancake is just barely ready, it means one side is inevitably not quite done while the other side is either about right or too cooked... You see my dilemma. My favorite pancakes are the boxed Jiffy blueberry mix, but I digress.
Usually I end up just not eating homemade pancakes and I have to resort to IHOP or something like that - which is fine because their pancakes are usually pretty good. But, my mother-in-law came to my family's rescue this year at Christmas - she presented me with the gift of a waffle maker. I kind of expected that it was going to be just another appliance that sat on my countertop taking up space while I didn't use it, but I was wrong. It's actually an appliance that sits on my countertop taking up space while I DO use it! 
Much to my son's delight, I have found that I enjoy (and am actually kind of good at) making waffles! Okay, so the light sensor that tells you when they're "done" isn't always accurate, but once I got the hang of it, I can pretty much judge when they're cooked enough. My son loves waffles - or maybe it's just the syrup - and he'll get so excited when I say I'm fixing them for breakfast. He'll say "waffles! Waffles! Oh, mommy, thank you! Thank you! Waffles!" Only because it's a two-year-old saying it, the word waffles comes out sounding like apples - don't ask, they really do sound similar when he says them...
So, I guess that since March 25th is National Waffle Day, I'll have to plan on them for breakfast. The best part is that you can even prepare the batter ahead of time and stick it in the fridge overnight. Then all I have to do is pour it onto the waffle iron, and a few minutes later - instant hit breakfast! And one of the great things about waffles in our house is that our son can actually feed himself waffles as long as I cut them into bite-sized pieces (he's good with a fork - unlike a spoon required for soupy cereal) and that means more time for me to get myself and the new baby ready!
Hurray for waffles!
