November is Peanut Butter Lover's Month!

I never gave much thought to peanut butter. I don't know if it was a change in my tastes due to pregnancy, but ever since my son was born, I love the stuff. Now that I'm expecting again, my husband laughs at me because I'm constantly craving PB&J sandwiches. The hard part about all this is that since my son isn't quite two yet, his pediatrician has told us not to give him anything with peanuts in it yet. It makes "sneaking" anything with peanut butter in it hard!

Anyway, imagine my joy to find out that November is Peanut Butter Lover's Month! Now I've got a great excuse for fixing some of the peanut butter desserts I've been wanting but have been telling myself that I really don't need... To celebrate, I thought I'd share a few recipes!

One of my favorites is Buckeyes. This candy is a homemade version of Reeses cups (YUM!). This recipe comes from VeryBestBaking.com.

Buckeye Candy

Ingredients:
* 2 cups creamy peanut butter, (not all-natural)
* 1/4 cup (1/2 stick) butter or margarine, softened
* 3 3/4 cups (16-oz. box) powdered sugar
* 2 cups (12-oz. pkg.) Semi-Sweet Chocolate Morsels
* 2 tablespoons vegetable shortening

Directions:
LINE baking sheets with wax paper.

BEAT peanut butter and butter in large mixer bowl until creamy. Beat in powdered sugar until mixture holds together and is moistened. Shape into 1-inch balls; place on prepared baking sheets. Freeze for 1 hour.

MELT morsels and shortening in medium, uncovered, microwave-safe bowl on HIGH (100%) power for 1 minute; STIR. Morsels may retain some of their shape. If necessary, microwave at additional 10- to 15-second intervals, stirring just until melted.

DIP peanut butter centers into melted chocolate using a toothpick, leaving a small portion of the center uncovered. Shake off excess chocolate and scrape bottom of candy on side of bowl. Return to baking sheets; refrigerate until chocolate is set. Store in covered container in refrigerator.

The funny thing is that the last time I made this recipe, I had so much left over that I was able to send some with my sister who then took it to one of her family gatherings (on my brother-in-law's side) where they loved them. Odd, since my sister doesn't like peanut butter. What's wrong with her?

The next recipe I wanted to share is super sweet, and something I've never fixed myself, but always enjoy when I can get it! After seeing this recipe though, and how easy it seems, I may just have to try it myself - and that way I won't have to wait for someone else to fix it!

Peanut Butter Pinwheels

Ingredients:
1 lb box confectionary sugar
1 tsp vanilla
milk (a little)
ΒΌ lb butter
smooth peanut butter

Directions:
Mix sugar, vanilla and melted butter in a mixing bowl. Add a little milk if needed. Mix until smooth (consistency of dough). Roll out as if rolling pie crust. Spread peanut butter over the rolled out mixture and roll into roll. Wrap in wax paper and freeze or refrigerate. Cut into pieces when set.

BC PB cookie mix.jpg The last recipe I wanted to share isn't really a recipe, but something a friend of ours fixed that I loved. It's SO easy. You just take the Betty Crocker peanut butter cookie mix and make it in a pan instead of making it in cookies. When it's cooked, simply put chocolate icing on top. Quick, easy, and delicious!
