Lovin' those waffles!

Are you a breakfast person? I absolutely love breakfast – although I usually prefer it when someone else fixes it! I remember growing up with Sundays being our “big breakfast” day. My dad would always fix us something phenomenal after church. Usually it was bacon, tenderloin or sausage and eggs with biscuits, or toast, and if he was really in the cooking mood, pancakes!

(If you can’t tell, I like food!) Now that I’m married and have my own family, I don’t get to enjoy the breakfasts as often as I’d like, but luckily I live very close to my family. I still make a point to see my family some Saturday mornings, and if I’m lucky, I get to enjoy a breakfast.

So, imagine my surprise – and pleasure - when I found out that tomorrow (March 25th) is Waffle Day! Apparently, in Sweden, there is a holiday for the feast of the Annunciation that is now known as Waffle Day. I though it was also neat that this holiday usually falls exactly nine months from Christmas. What a fun holiday to celebrate! Enjoy the day and don’t forget to have your waffles – or if you prefer pancakes – I won’t tell!
