Happy St Patty's Day!

I'm all about desserts, so today I think I'll celebrate St Patrick's Day with some green sweets! Join me in indulging and have a great St Patrick's Day whether you're Irish or not!

* 1 cup butter, softened
* 1 cup white sugar
* 1 egg
* 2 2/3 cups flour
* 1/4 teaspoon salt
* 2 teaspoons mint extract
* green food coloring
* chocolate, for garnish

Directions

1. In a large bowl, cream together the butter and white sugar until light and fluffy.
2. Beat in the egg, then stir in the mint extract.
3. Combine the flour and salt; stir into the sugar mixture.
4. Add several of drops of food coloring until desired shade of green, mixing well.
5. Roll into a log, wrap in plastic wrap and refrigerate for 1 hour.
6. Preheat oven to 400°F
7. Slice into 1/4-inch slices and place on cookie sheets.
8. Bake for 9 minutes in the preheated oven, or until lightly golden at the edges.
9. Remove from cookie sheets to cool on wire racks.
10.Drizzle with melted white and/or dark chocolate if desired.

and to wash those cookies down, don't forget the milkshake!

* 2 cups vanilla ice cream or soy ice cream
* 1 1/4 cups 2% low-fat milk or soymilk
* 1/4 teaspoon mint extract
* 8 drops green food coloring

Directions

1. Combine all ingredients in a blender and blend on high speed until smooth.
2. Stop blender to stir with a spoon if necessary to help blend ice cream.
3. Pour into 12-ounce cups and serve each with a straw.
