Egg Salad Week!

You can never have too much of a good thing - well, most of the time anyway! It seems that the week or so after Easter, we're always overrun with boiled eggs. As fun as it is to dye them and decorate them, there's only so many hard-boiled egg sandwiches someone can eat...

I'll never forget spending the afternoon in my grandmother's kitchen as a little girl with my sister and sometimes my older cousin, dying eggs. My grandfather started a tradition that we would always decorate one egg as the "lucky" egg. We would use the white crayon that came with the dye kit and draw special designs on it so when we dyed the egg it showed. Then, when the eggs were hidden and we found them, whoever found the "luck" egg got a dollar. Over the years, we changed it so that we each decorated a "lucky" egg of our own, so there was two or three of them floating around outside the house for someone to find!

easter%20bread.jpg Another fond memory of boiled eggs is my other grandmother's braided Easter bread. Although I never ate any as a child (you know kids, no appreciation for things like this...) I always loved the way it looked!

I guess it makes sense then that the week after Easter is "Egg Salad Week." Just one of many things you can do with the left-over boiled eggs, egg salad is an easy favorite of mine for using up the eggs. You can also put them in chicken salad, but I guess that's a personal preference!
